Vegan Banana Bread

Sugar-Free + Gluten-Free


SO TASTY! I have not baked with sorghum/millet flour before, and I LOVE the taste!



Ingredients:

Chia + Flax egg: Combine all of these and leave to 'set' for 10 minutes while mixing the other bits.

  • 1/4 cup chia

  • 1/4 cup ground flax meal

  • 3/4 cup water

DRY (combine in one bowl)

  • 1 cup millet flour

  • 1 cup sorghum flour

  • 2 tsp cinnamon

  • 1 tsp baking powder

  • 1/2 tsp baking soda

WET (mix then add to the dry ingredients)

  • 1/4 melted coconut oil

  • 1.5 cups mashed banana

  • 2 tsp vanilla bean paste

Magic Method:

  • Oven 170, line a bread tin.

  • Combine all three components above, mix well.

  • Plop in a bread tin, smooth the surface by dipping your spatula in water and gliding it over the bread mix. Sprinkle with dates and pumpkin seeds.

  • Bake for 50 minutes.

  • Allow to completely cool before slicing; otherwise, you have a crumbly affair!

Notes: If the mix is a little dry, add a few splashes of water. Conversely, add a little more flour if you find it's too wet.
